Recipe For The Dogs - Mini "Pupkin" Pies

It took Oliver and Emerson all of one day to figure out that when I said "do you want a pumpkin pie?" what they were going to get was really good.  Lip smackin' good.  Beg until your mother pleads for you to leave the kitchen good.  Go in your crate without an issue good.  Needless to say, these are highly recommended by my two taste testers.  Sorry, by my three taste testers......Jackson the cat-dog enjoys them as well.  It was hard to take a photo of him eating his since he slumps over his pie to ensure no one steals it while he eats.

Pumpkin is high in fiber and antioxidants, a great snack for people and dogs alike.  The flour I used is whole-wheat but if your dog is allergic, you can certainly replace the whole-wheat for a different type of flour.  I wouldn't use brown rice flour entirely, if that's your alternative choice (I think the crust would be too hard), but you could certainly use a mix, perhaps oat flour and brown rice flour.

I hope your four-legged friends enjoy this as much as mine do!

Mini "Pupkin" Pies - For the Dogs
Makes 18 mini pies

Pastry:
1 1/4 - 1 1/2c. whole-wheat flour (for alternate choices, read the note above)
1/4 c. canola, or other neutral tasting oil
1/4 c. water
1 egg

Filling:
1 c. cooked, mashed pie pumpkin, or canned pumpkin puree (not pumpkin pie filling)
1/2 t. cinnamon
1 T. honey
1 egg

Preheat the oven to 400 degrees Fahrenheit.

Combine all dough ingredients in a medium bowl (starting with the 1 1/4c. flour), mixing thoroughly with a wooden spoon.  Pour dough onto counter and knead in as much of the remaining 1/4 cup of flour as is needed to reach a workable consistency (should be dry, not sticky, but still soft).  Divide the dough into 18 pieces and press each piece into the cup of a mini muffin pan.

Combine all filling ingredients together in the now empty medium size bowl, whisking until thoroughly blended.  Scoop even amounts into each of the crusts.

Bake 15-20 minutes, or until the pastry edges are lightly browned.

Store in an airtight container in the refrigerator up to 1 week.
Can also be stored in an airtight container in the freezer for up to 2 months.
