Easy Chocolate Truffles - Amaretto, Raspberry Mocha, Chocolate Mint, Chocolate Strawberry and Chocolate Orange

If you make candy at no other time, Valentine's Day seems the perfect time to make these simple truffles.  My husband will tell you he doesn't like chocolate much.  I have no idea why he believes this since he has no issue polishing off his fair share of anything chocolate.  When he first began saying this, I stopped making chocolate things.  But he would still eat chocolate.  So now, I just nod the "I know" nod when he says it, make chocolate treats, and watch as he happily enjoys them.

Easy Chocolate Truffles
Makes 12 truffles

**to make the Raspberry Mocha Truffles - stir in, with the chocolate, 3 Tablespoons seedless raspberry jam and substitute liqueur or extracts with 2 teaspoons coffee extract and 1 teaspoon vanilla extract.**

1/4 cup heavy cream
2 Tablespoons unsalted butter
6 ounces bittersweet or semi-sweet chocolate, chopped fine, or chocolate chips
1 Tablespoon Amaretto liqueur  OR 1/8 teaspoon Peppermint Extract OR 1 teaspoon orange extract and 1/4 teaspoon vanilla extract OR 1 teaspoon strawberry extract {or any liqueur or extract that pairs well with chocolate}
Cocoa Powder, finely chopped nuts, or sprinkles for rolling in

In a small saucepan over low heat, warm the cream, butter and chocolate, stirring until melted.  Remove from the heat.  Stir in liqueur or extract{s}.

Pour into a bowl an place in the refrigerator to cool and thicken about 4 hours or the freezer for 30 minutes.

With a teaspoon or small scoop, scoop the chocolate mixture into small balls.  Roll in cocoa, finely chopped nuts or sprinkles.

Store in a sealed container in the refrigerator.

These look so yummy! And it's funny that J says he doesn't like chocolate much but eats all the treats! I never believe anyone when they say they don't like chocolate. Crazy! :)
