$60.00 A Week: Sunday Meal Prep + Weekly Meal Plan


Once again I tried to use as much from our freezer/pantry/garden when planning this week's menu.  The garden has come to an end but we are lucky enough to have some veggies stored in the barn to eat up over the next week or two.  The remainder were already eaten or preserved.

This weekend I've also tried to prep quite a few freezer meals for the next month or so.  It's going to get very hectic around here so I want to try and get as much ahead of the game as I can.  Putting together meals that can be tossed in the slow-cooker means I can have J get things going before I get
home from work.  I've included some freezer cookie dough balls so we can bake as few or as many cookies should we either want something sweet or have guests over.

Sunday Prep:

  • Freezer Chicken Dishes for Slow-Cooker:  Chicken Teriyaki, Bourbon Chicken, Honey-Sesame Chicken, Chicken Fajitas, Honey Mustard Chicken and Ginger-Peach Chicken
  • Freezer Pork Dishes for Slow-Cooker:  Country/Southern Style Pork Ribs with BBQ Sauce, Spicy Carnitas {for making Burritos} and Bourbon Pork
  • Freezer Meatballs
  • Freezer Cookie Dough

Meal Plan:
Monday
Breakfast - Freezer Breakfast Sandwiches
Lunch - Taco Soup {for J} & Minestrone Soup {for me} and Yogurt + Apple for a snack
Dinner - BBQ Slow-Cooker Brisket, Mac & Cheese, and Green Beans

Tuesday
Breakfast - Oatmeal with Frozen Berries
Lunch - Taco Soup {for J} & Minestrone Soup {for me} and Yogurt + Apple for a snack
Dinner - Honey-Sesame Chicken {freezer & slow-cooker meal} with Rice and Winter Squash

Wednesday
Breakfast - Freezer Breakfast Sandwiches
Lunch - Taco Soup {for J} & Minestrone Soup {for me} and Yogurt + Apple for a snack
Dinner - Cranberry Slow-Cooker Pork Loin over Rice, bread, and Roasted Winter Squash with Maple Syrup drizzle

Thursday
Breakfast - Oatmeal with Frozen Berries
Lunch - Leftover Pork & Cranberry Sandwich, Berry Yogurt Pudding & Celery with Almond Butter
Dinner - Shepherd's Pie, Braised Winter Greens & No-Knead Artisan Bread

Friday
Breakfast - Homemade Bread Toasted with Cashew Butter & Jam
Lunch - Leftover Pork & Cranberry Sandwich, Berry Yogurt Pudding & Celery with Almond Butter
Dinner - Out

Saturday
Breakfast - Slow-Cooker Breakfast Casserole
Lunch - Clam Chowder & Grilled Cheese Sandwich
Dinner - Slow-Cooker Chicken Enchiladas, Mexican Rice and Corn

Sunday
Breakfast - Scrambled Eggs with Homefries
Lunch - Wedding Soup
Dinner - Spaghetti & Meatballs with No-Knead Artisan Bread & Sauteed Broccoli Rabe
