$60.00 A Week: Sunday Prep + Weekly Meal Plan


Happy Sunday!!  I intended to get this posted yesterday but we got busy making product and, well, it didn't happen. As I had mentioned at the start of this challenge, I wanted to concentrate on shopping our freezer, garden, and pantry first.  The majority of this week's ingredients we already had!  I also like to try and make sure we use large items such as roasts or whole chicken more than once in a week.  This week I'll be doing that with chicken.  It will be 2 dinners and make soup & quesadillas for lunches.


The freezer burritos were made a couple of weeks ago so they are ready to go, making my prep tonight pretty simple.


Sunday Prep:

Monday:
Breakfast - Freezer Burritos, and Homemade Yogurt with Frozen Mixed Berries
Lunch - Leftover Taco Soup
Dinner - Slow-Cooker Whole Chicken in Milk {using this recipe from The Kitchn}, Mashed Potatoes & Gravy, Steamed Broccoli

Tuesday:
Breakfast - Oatmeal with Fruit
Lunch - Chicken & Rice Soup
Dinner - Cider Braised Pork Chops, Rice, and Roasted Butternut Squash

Wednesday:
Breakfast - Freezer Burritos and Homemade Yogurt with Frozen Mixed Berries
Lunch - Chicken & Rice Soup
Dinner - Shepherd's Pie and Homemade No-Knead Slow-Cooker Bread

Thursday:
Breakfast - Oatmeal with Fruit
Lunch - Chicken Quesadilla's and Apple Slices with Peanut Butter for snack
Dinner - Chicken & Biscuits {using leftover chicken}

Friday:
Breakfast - Cinnamon Swirl Toast
Lunch - Chicken Quesadilla's and Apple Slices with Peanut Butter for snack
Dinner - Homemade Pizza and Baked Chicken Wings

Saturday:
Breakfast - Omelets & Hashbrowns
Lunch - Wedding Soup
Dinner - Salisbury Steak, Mashed Potatoes & Gravy and Honey Glazed Carrots

Sunday:
Breakfast - Amish Oatmeal
Lunch - Wedding Soup
Dinner - Slow-Cooker Cassoulet, Homemade No-Knead Slow-Cooker Bread, and Roasted Butternut Squash
