Quick & Easy Meal: Skillet Spaghetti

quick and easy one-pot meal: Skillet Spaghetti is super easy AND delicious!

 During the week I'm all about quick & easy and if it's also a one-pot meal, well that just pleases me even more!  This recipe fits all that criteria AND it's delicious.

Your initial thought might be, how much easier do we need to make spaghetti?  Yes, spaghetti can be a fairly simple meal to put together, but you still have to watch it.  Watch for the sauce, watch for the
water to come to a boil, toss in the pasta then watch again.  Not this recipe.  Throw it in and forget it for a few minutes.  Then, when it's ready, you can leave it in the pan, uncovered, as it cools and as you finish up a thing or two prior to serving dinner.  No fear of sauce getting burned, water boiling over, or forgotten noodles becoming all stuck together.


Skillet Spaghetti

3/4 lb. 90-percent lean ground beef
4 ounces Italian sausage, removed from casings
2 garlic cloves, minced
1/4 teaspoon red pepper flakes
1/4 teaspoon dried Italian seasoning mix
1 (28-ounce) can crushed tomatoes
8 ounces spaghetti, broken into rough 2-inch pieces
2 cups water
1 1/2 teaspoons salt
1/4 cup heavy cream
6 tablespoons finely chopped fresh basil, optional
1 cup shredded Italian cheese blend {or, a combination of mozzarella and parmesan}, or chunks of fresh mozzarella

In an oven-safe skillet, cook ground beef and sausage over medium heat, breaking up meat with wooden spoon, until no longer pink, about 5 minutes. Drain fat from skillet and add garlic, pepper flakes, and italian seasoning and cook until fragrant, about 1 minute.

Stir in tomatoes, broken spaghetti noodles, water, and salt. Cover and cook, stirring often, until spaghetti begins to soften, about 7 minutes. Reduce heat to medium-low and continue to simmer, covered, until spaghetti is al dente, about 7 minutes.

Stir in cream, basil, and 1/3 cup cheese {if using grated}. Sprinkle with remaining cheese and broil, under pre-heated broiler, until surface is lightly browned/bubbly.  If using fresh mozzarella, plop chunks on top, cover to allow it to melt for 2 minutes.  Serve.
