$60.00 A Week Challenge: Sunday Prep + Weekly Meal Plan


This week's menu, like the last couple of weeks, is based solely on what we've got in our freezers.  With the meat birds having been processed this week we have very little freezer space left so it's time to start using up all of the reserves.  Because of that, this weeks receipts won't reflect much spending either.  We simply have no room to stock up on anything and, therefore, no need to.



The menu's will also get much more simplified between now and Christmas since we will have no time at all for much prep work.

I added quesadilla's into lunches again this week.  We ended up having so many leftovers last week that we never had to take out any of the quesadillas I put in the freezer for lunches. 

Sunday Prep:
  • I do not have any pizza dough in the freezer at this time, so I'll make up a couple batches since I'll be using some of the dough on Saturday for the Ham & Cheese rolls {kind of like a savory cinnamon roll}
  • I was not able to get apple pie's made up and in the freezer last Sunday so I'll give that a try again this Sunday

This Week's Meal Plan:
Monday
Breakfast - Freezer Croissants
Lunch - Chicken & Bean Quesadilla with chips & salsa
Dinner - Pork & Beans Stew with Rice & Maple-Roasted Winter Squash

Tuesday
Breakfast - Freezer Breakfast Sandwich
Lunch - Leftovers
Dinner - Honey-Mustard Chicken {freezer meal} with Scalloped Potatoes and Broccoli

Wednesday
Breakfast - Freezer Croissants
Lunch - Chicken & Bean Quesadilla with chips & salsa
Dinner - Slow-Cooker Pork for Burritos with Guacamole & Salsa & Homemade Tator Tots

Thursday
Breakfast - Freezer Breakfast Sandwich
Lunch - Leftovers
Dinner - Chicken Teriyaki with Rice and Veggie Stir-Fry

Friday
Breakfast - Freezer Croissants
Lunch - Chicken & Bean Quesadilla with chips & salsa
Dinner - Beef Skillet Rice with Braised Winter Greens

Saturday
Breakfast - Biscuits, Eggs & Gravy
Lunch - Ham & Cheese Rolls with Split Pea Soup
Dinner - Easier Chicken Cordon Bleu with Homefries and Brussels Sprout Salad

Sunday
Breakfast - French Toast and Bacon
Lunch - Leftover Chili {stored in individual servings in the freezer} with Homemade Bread
Dinner - Frozen Stuffed Peppers and Roasted Winter Squash
