$60.00 A Week Challenge: Sunday Prep + Weekly Meal Plan


There will be no Sunday prep this Sunday.  It's been a crazy-busy weekend starting at 5 a.m. on Friday and not ending until today at 4p.m.  I feel ahead of the game for the moment since I even managed to get a quick pan of our favorite brownies made too! The menu this week will be all about what's easy.  And delicious!

Breakfast - Apple & Walnut Oatmeal
Lunch - Spicy Chicken & Rice Soup & Apple Slices with Almond Butter for a Snack
Dinner - Chicken & Biscuits

Tuesday
Breakfast - Granola & Yogurt
Lunch - Ham & Split Pea Soup with Orange Slices for a Snack
Dinner - Spaghetti Pie and Butternut Squash Salad

Wednesday
Breakfast - Apple & Walnut Oatmeal
Lunch - Spicy Chicken & Rice Soup & Apple Slices with Almond Butter for a Snack
Dinner - Baked Chicken Enchiladas with Mexican Rice & Roasted Broccoli

Thursday
Breakfast - Granola & Yogurt
Lunch - Ham & Split Pea Soup with Orange Slices for a Snack
Dinner - Baked Pork Tenderloin, Mashed Potatoes and Sauteed Cabbage

Friday
Breakfast - Apple & Walnut Oatmeal
Lunch - Spicy Chicken & Rice Soup & Apple Slices with Almond Butter for a Snack
Dinner - Clam Linguine with Sauteed Spinach and No-Knead Crusty Bread

Saturday
Breakfast - Baked Blueberry Crepes
Lunch - Chicken Chili with Cornbread Muffins
Dinner - Burgers with Baked Butternut Squash "fries"

Sunday
Breakfast - Cheesy Breakfast Casserole
Lunch - leftover Chicken Chili with Cornbread Muffins
Dinner - Stuffed Poblano Peppers with Spicy Sauteed Corn
