With such strange weather it's hard to plan meals.  The meals we would typically crave this time of year, we aren't necessarily wanting.  Stews, casseroles, slow-cooker roasts - all wonderful during the chilly winter months but not so much when the daytime temps are in the 50's.  So, we adjust as needed and continue with some slow-weather foods.

We are still in the push of holiday shopping which means we have to rely on quick and easy meals.  J spends the day prepping products and boxes and we spend our evenings doing the same.  So, the less time spent on cooking and dishes means more time we can spend on the business.  A win-win.

Monday
Breakfast - Freezer Breakfast Burritos
Lunch - Minestrone Soup, plus yogurt & frozen berries for snack
Dinner - Slow-Cooker Bourbon Chicken {freezer meal} with Rice & Butternut Squash

Tuesday
Breakfast - Freezer Almond Croissants
Lunch - Chicken Quesadilla with salsa
Dinner - Pan-fried Pork Chops with Apple Cider Glaze, Scalloped Potatoes and Steamed Broccoli

Wednesday
Breakfast - Freezer Breakfast Burritos
Lunch - Minestrone Soup, plus yogurt & frozen berries for snack
Dinner - Beef Skillet Rice with Mexican Corn

Thursday
Breakfast - Freezer Almond Croissants
Lunch - Chicken Quesadilla with Salsa
Dinner - Slow-Cooker Chicken Quarter with Broccoli & Cheese Rice and HoneyNut Squash

Friday
Breakfast - Freezer Breakfast Burritos
Lunch - Minestrone Soup, plus yogurt & frozen berries for snack
Dinner - Seafood Stew with homemade Ciabatta and Spinach

Saturday
Breakfast - Veggie Omelet & Hashbrowns
Lunch - Taco Soup
Dinner - Chicken Cordon Bleu with Rice and Steamed Broccoli

Sunday
Breakfast - Slow-Cooker Breakfast Casserole
Lunch - leftover Taco Soup
Dinner - Lasagna with Green Salad
