$60.00 A Week Grocery Budget Challenge


We are now in the midst of winter weather which means comfort foods are showing up on the menu more frequently.  Stews, braises and bakes are among my favorite meals to savor.  This also usually equates to one-dish meals which means less dishes to wash.  A win-win in my book!

We continue to "shop" from our abundance of winter squash we've been storing in the barn and are finally using the last of our apples from cold storage.  The freezers are bulging a bit less at the seams with meat we'd previously bought in bulk which means we can {almost} start stocking up during sales again.

Monday
Breakfast - Oatmeal with Applesauce & Walnuts
Lunch - Black Bean/Corn/Avocado Salad with Cilantro Dressing
Dinner - Pork Chops and Rice with Cabbage & Apples

Tuesday
Breakfast - English Muffins with Peanut Butter & Jelly
Lunch - Chicken Tortilla Soup
Dinner - Spaghetti & Meatballs with Pear & Blue Cheese Salad

Wednesday
Breakfast - Oatmeal with Applesauce & Walnuts
Lunch - Black Bean/Corn/Avocado Salad with Cilantro Dressing
Dinner - Chicken Cordon Bleu with Rice and Roasted Acorn Squash

Thursday
Breakfast - English Muffins with Peanut Butter & Jelly
Lunch - Chicken Tortilla Soup
Dinner - Jambalaya with Braised Winter Greens

Friday
Breakfast - Oatmeal with Applesauce & Walnuts
Lunch - Black Bean/Corn/Avocado Salad with Cilantro Dressing
Dinner - Freezer Meal: Slow-Cooker Honey-Mustard Chicken and Rice with Steamed Spinach

Saturday
Breakfast - French Toast & Bacon
Lunch - Italian Wedding Soup
Dinner - Pot Roast with Carrots, Potatoes and No-Knead Bread

Sunday
Breakfast - Omelets and Hashbrowns
Lunch - Sandwiches and leftover Soup
Dinner - Oven-baked Pork Ribs with Stovetop Creamy Mac & Cheese, and Steamed Broccoli


Sunday Prep:
A simple prep for this week.  I only needed to put the apple-walnut oatmeal in the slow-cooker Sunday night so it was ready for Monday's breakfast.  I made enough to put the leftovers in the refrigerator for the rest of the week.
