$60.00 A Week Grocery Budget Challenge


I had shared at the start of the $60.00 a week grocery budget challenge that I was trying some new freezer cooking recipes.  I also told you I would share any that turned out well.  Unfortunately only a couple passed that test.  I'm not giving up though - I'll continue researching and trying because it sure makes the weeknights a bit easier.

The other thing I've been looking for is more one-dish ideas.  Whether they are made on the stovetop in a single pan or in the oven, roasted in a pan or on a baking sheet, this not only saves time prepping and cooking but time doing dishes as well.  I've got a couple of new ones on the menu this week that I have high hopes for.  Fingers crossed......

And I've decided to make a dessert this week.  For some reason I am craving Cinnamon Rolls so they will be in the works tonight.  Ooey, gooey and topped with a cream cheese frosting.  Just typing this makes me drool.

Monday
Breakfast - Apple & Brown Sugar Oatmeal
Lunch - leftover Taco Soup {homemade yogurt with frozen berries will be snacks all week}
Dinner - One-Pan Roasted Chicken Quarter, Cabbage Slices & Sweet Potato Wedges

Tuesday
Breakfast - Toasted English Muffins with Almond Butter & Strawberry Butter
Lunch - Minestrone Soup
Dinner - One-Pan Roasted Mustard Glazed Pork Tenderloin and Butternut Squash Cubes, Steamed Asparagus

Wednesday
Breakfast - Apple & Brown Sugar Oatmeal
Lunch - Chicken Noodle Soup
Dinner - One-Pan Roasted Marinated Flank Steak with Peppers and Onions and Mexican Rice

Thursday
Breakfast - Toasted English Muffins with Almond Butter & Strawberry Butter
Lunch - Minestrone Soup
Dinner - Southwest Chicken & Rice {One-Pot Meal}

Friday
Breakfast - Apple & Brown Sugar Oatmeal
Lunch  - Chicken Noodle Soup
Dinner - Steaks with Oven-Roasted Potatoes and Steamed Green Beans

Saturday
Breakfast- Omelets & Hashbrowns
Lunch - French Bread Pizza
Dinner - Pork Stew, Honey Glazed Carrots and Oatmeal Sandwich Bread

Sunday
Breakfast - Amish Oatmeal
Lunch - Chili with Cornbread Muffins
Dinner - Chicken Stew with Biscuits


Sunday Prep:

  • Making Cinnamon Rolls
  • Making Yogurt
  • Making Minestrone Soup in the slow-cooker 
  • Making Chunky Applesauce in the slow-cooker Sunday night for Monday's breakfast

Weekly Food Costs:  $67.20 {a little over budget but we splurged on steaks this week}

Commissary: $32.48
  • Carrots, Oats, French Bread, Pork Shoulder, Butter, Lemonade, Orange Juice, Soda, Cilantro, Cabbage, Sweet Potatoes, 
Fresh Market: $24.72
  • Green Beans, Steaks, Asparagus
Farmer's Market: $10.00

Amazing! What a great weekly meal plan - and for about $60! Fantastic. Unfortunately, the boys in my family (including hubby) are not soup fans. I so wish they were, as soup is a such a budget-friendly meal.
