$60.00 A Week Grocery Budget Challenge

This week I went over budget in order to purchase items to make-ahead and use throughout the month.  I'm trying to get back in the habit of stocking the freezer the first weekend of every month.  Since next weekend we'll be making and packaging product for Valentine's day I chose to use this weekend as my prep for February.


Remember that we are shopping from our pantry and freezer first, then purchasing items we don't have on hand.  Additionally, when we have extra cash that week and there is a great sale on something we use, we purchase our stock-up items to replenish both the pantry and the freezer.

Weekly Menu:
Monday
Breakfast - Blueberry Freezer Muffins & homemade yogurt
Lunch - Leftover Beef Stew {snacks all week are yogurt with jam and/or mandarin oranges}
Dinner - Slow-Cooker BBQ Country Pork Ribs with Mac & Cheese and Steamed Broccoli

Tuesday
Breakfast - Oatmeal with Peaches and Brown Sugar
Lunch - Leftover Beef Stew
Dinner - Slow-Cooker Spinach-Artichoke Chicken over Egg Noodles

Wednesday
Breakfast - Blueberry Freezer Muffins & Homemade Yogurt
Lunch - Chicken Noodle Soup
Dinner -  Slow-Cooker Texas BBQ Pot Roast with Homefries & Honey-Glazed Carrots

Thursday
Breakfast - Oatmeal with Peaches and Brown Sugar
Lunch - Chicken Noodle Soup
Dinner - Thai Chicken over Rice with Veggie Stir-Fry

Friday
Breakfast - Blueberry Freezer Muffins & Homemade Yogurt
Lunch - out {Gift Card}
Dinner - Orange-Glazed Pork Chops with Rice and Baked Squash

Saturday
Breakfast - French Toast Casserole
Lunch - Slow-Cooker Sausage & Peppers Sandwich
Dinner - Oven Roasted Sage & Peach Chicken with Mashed Potatoes and Steamed Broccoli

Sunday
Breakfast - Eggs & Hashbrowns
Lunch - out
Dinner - Slow-Cooker Asian Short Ribs with Rice and Veggie Stir-Fry

  • cilantro, oregano, sage, parsley, peppers, snow peas, sriracha sauce, country pork ribs, breakfast sausage, italian sausage, ciabatta rolls, half & half, shredded cheese, ricotta, sliced cheese
Commissary - $47.54
  • onions, carrots, celery, sugar, canned tomatoes, tortilla shells, oats, pork chops, soda, sandwich bread, english muffins, sour cream, frozen spinach
