Freezer Chicken Quesadillas
This week's menu focused heavily on both the make-ahead meals I prepared a couple of weeks ago and put in the freezer as well as the bulk items stocked up on earlier in the year.  And for some reason ended up being a mexican theme for much of the week.  I also went with a couple of slow-cooker meals and a fully prepared freezer meal since I can have J throw them in during the day - I pull everything together before I leave for work so it's ready to go.  There's nothing better than having dinner prepared when you get home!  Now, if I could just figure out how the dishes can do themselves......

Dinner - Baked Chicken Quarters, Sautéed Cabbage and Sweet Potato Wedges

Thursday
Breakfast - Oatmeal with Frozen Peaches & Brown Sugar
Lunch - Freezer Chicken Quesadillas with Salsa
Dinner - Stuffed Poblano Peppers with Corn

Friday
Breakfast - Freezer French Toast & Fruit
Lunch - Freezer Chicken Quesadillas with Salsa
Dinner - Baked Freezer Chicken Enchiladas with Mexican Rice and Roasted Squash

Lunch - French Bread Pizza
Dinner - Slow-Cooker Spinach, Artichoke & Chicken over Rice

Lunch - Chicken Tortilla Soup
Dinner - Oven Baked BBQ Ribs with Steamed Broccoli and Baked Mac & Cheese

Sunday Prep

  • Make yogurt
  • Make bread dough to store in refrigerator for use this week
  • Make Red Velvet Cake with Cream Cheese Frosting
