Freezer Cooking: Slow-Cooker Sausage & Pepper Sandwiches


I love sausage and peppers.  It's a great comfort food that is filling and delicious.  We have some GREAT locally made sausage that pushes this little number right over the top.  Pair that with a delicious ciabatta roll and you've got one amazing meal.  Perfect for gameday or a super quick and easy lunch or dinner!  Throw them in the slow-cooker and in 2 hours.....ta dah!!  Done.

Looks like you've gone to great lengths when all you really had to do was turn them once and heat some tomato sauce.

These can also be thrown in a 350 degree {Fahrenheit} oven for 30 minutes {wrapped in foil as well} if you are short on time or are using your slow-cooker for something else.


 Slow-Cooker Sausage & Pepper Sandwiches

6 hot or mild Italian sausages
1 tablespoon olive oil
1 - 2 bell peppers, sliced {depending on how many peppers you like on your sandwich}
1 medium onion, sliced thinly
salt and pepper
6-12 ciabatta rolls, split horizontally {depending on how big your sausages are, you can either put a half or a whole per sandwich}
6-12 slices pepper jack cheese {depending on how many sandwiches you make}
At time of serving: tomato or spaghetti sauce, if desired

Heat a large skillet with 1/4 cup water over medium heat. Place the whole sausages in the pan and cook, stirring frequently, for about 10 minutes.  Add water, as needed, one Tablespoon at a time to keep liquid in the pan.

Remove from pan and dump out any remaining water.  Add oil to pan and re-heat over medium heat.  Cook the sausages until browned on all sides.  Remove and set aside.


Add peppers and onions to the pan along with a pinch of salt and pepper and cook, stirring from time-to-time, until softened.  Remove from pan.


Slice the sausage in half lengthwise.  Use either one half or one full sausage per sandwich {depending on your preference}.  Lay out the rolls and place one slice of cheese on each bottom half.  Divide the cooled sausage and vegetables among the rolls.

Place the tops on the rolls and wrap each sandwich with aluminum foil. Freeze until ready to serve.

To serve: place the wrapped sandwiches in a slow cooker on LOW for 2 to 3 hours, turning once.  Serve with sauce on the side, if desired.

  1. Very smart! (heating in slow cooker like that). I have to confess, when I saw your picture of those sandwiches I had to put sausage (and peppers, I have onions) on my grocery list! They look so good. Growing up, that used to be a staple at picnics and any holiday gatherings with my relatives. Andrea
