Monthly Make-Ahead Meal Prep: February 2016


I'm trying to pick back up an old habit that helped out tremendously on busy weeknights - making meals and parts of meals up at the beginning of the month to use throughout the month.  Saturday was dedicated to just that.

I bought some items specifically for these meals and then used what I had in the pantry and freezer.

It was a full day of cooking and prep work!




I had everything going by 11a.m.  Here's what I made to put up for the rest of the month:
freezer breakfast burritos
slow-cooker freezer sausage & peppers sandwiches
  • Dinner Rolls {un-baked}
  • Waffles {pop them in the toaster and breakfast is ready!}
  • Chicken Quesadillas {microwaved they make a quick lunch}

  • Breakfast Casserole
  • Blueberry Muffins {un-baked}
  • Chicken Enchiladas {sauce was also made and frozen separately}

I also prepped a few meals for this week {threw the sauces and meat together in a freezer bag so it is set to go in the crockpot}:
  •  Slow-Cooker Country Pork Ribs with BBQ Sauce
  • Slow-Cooker Spinach/Artichoke/Chicken
  • Slow-Cooker Texas BBQ Pot Roast
  • Thai Chicken.
And I made chocolate chip cookies too!

Whew!  It was a hectic day with a LOT of dishes to do but it will definitely save me some time throughout the month.

This is such an inspiration!! I used to do a big day of prep each month, but that was long ago. It really did help us save money and eat healthy though. I am completely inspired to begin again! Thank you.
