$60.00 A Week Grocery Budget Challenge + Meal Plan - August 22, 2016




We are supposed to get some relief this week to the summer's very hot and humid days.  I plan to celebrate by cooking a few comfort meals.  A couple of new recipes have also made it into the line-up this week.  The Citrus Chicken and the Gnocchi meals are both recipes I've never tried.  J has let me know he's already reluctant to try the gnocchi recipe.  He's only had one type of gnocchi that he's liked but he's willing to give it a shot.  We shall see....

Once again, all of the meat comes from our stockpile{s} in the freezers.  I did purchase pork chops this week that were on sale to replenish my existing stash since it was getting low.  I also have some yogurt leftover in the refrigerator that I bought either last week or the week before, which means I likely won't need to make any.  Have you ever tried Noosa yogurt?  It is by far my favorite {the dogs like it too!}.  After homemade, of course.

Dessert will even be made this week!  Our favorite "Easy As A Box Mix Brownies" {but SO much better} will be mixed and baked Sunday to enjoy with a little vanilla ice cream throughout the week.

Monday:
Breakfast - Yogurt and Granola
Lunch - Minestrone Soup
Dinner - Chicken Alfredo with Sautéed Squash

Tuesday:
Breakfast - Oatmeal with Jam
Lunch - Sandwich
Dinner - Grilled Steak Tips with Onions and Peppers, Mexican Street Corn and Steamed New Potatoes

Wednesday:
Breakfast - Yogurt and Granola
Lunch - Minestrone Soup
Dinner - Salmon with Dill Sauce, Slow-Cooker Braised Greens with Chorizo and Rice

Thursday:
Breakfast - Oatmeal with Jam
Lunch - Sandwich
Dinner - Cast Iron Skillet Chicken Pot Pie with Homemade Artisan No-Knead Bread

Friday:
Breakfast - Yogurt and Granola
Lunch - Minestrone Soup
Dinner - Ham & Cheese Gnocchi with Steamed Green Beans

Saturday:
Breakfast - Blueberry Buttermilk Pancakes & Bacon
Lunch - French Bread Pizza
Dinner - Grilled Citrus Chicken Quarters with Crockpot Mac & Cheese and Corn-On-The-Cob

Sunday:
Breakfast - Breakfast Burritos & Hashbrowns
Lunch - Sandwich & Macaroni Salad
Dinner - Beef Enchiladas with Homemade Salsa and Guacamole, Mexican Rice and Sautéed Squash & Corn

Sunday Prep:

  • Making brownies
  • Make no-knead bread dough for artisan bread
  • Make pie crust for chicken pot pie {make a double crust and freeze one}

Fresh Market - $17.87
 - 10 pork chops {for the freezer}, gnocchi

Commissary - $49.29
 - orange, lime, lemon, avocado, mayo, chicken stock, crackers, cheese, fettuccine pasta, rotelle pasta, elbow macaroni, butter, sour cream, frozen peas, lunch meat, enchilada sauce, tortilla shells, rice, pepperoni, vanilla ice cream

Farmers Market - $8.00
- cantaloupe, red pepper {I only have green ready in the garden}, milk, dill {mine has all either gone to seed or is too young}

Total Weekly Cost:  $75.16 {over budget because of the stockpiled meat - used leftover money from last week + $5.00}
