$60.00 A Week Grocery Budget Challenge + Meal Plan - August 8, 2016

 
 

It's going to be another hot week here so the grill and the slow-cooker will be put to good use.  I'm trying a recipe this week I had wanted to try a year ago and completely forgot about.  The Chicken Fajita Pasta from Kevin and Amanda's blog.  Have you tried this?  Fingers crossed for a good result.

Have you made homemade tator tots before?  It can be a bit of a process but they are delicious.  This week I'm going to try a new way of cooking them - in a mini muffin pan, and sprinkle a bit of cheese on top.

A quick note about last week.  I have updated the food cost section as I found a GREAT deal on Pork Butt Saturday and picked up two boneless pork butts {18 pounds} for $25.00.  We have portioned it out to freeze it and will get 10 meals plus leftovers from it.

Dinner - Fish Tacos with Lime-Cilantro Slaw and Homemade Cheesy Tator Tots

Wednesday
Breakfast - Oatmeal with Peaches & Brown Sugar
Lunch - Homemade Chicken & Cheese Taquitos
Dinner - Breakfast for Dinner!  Roast Beef  (leftover) Hash with Eggs & Toast

Thursday
Breakfast - Homemade Yogurt & Granola
Lunch - Sandwich
Dinner - Chicken Fajita Pasta with Grilled Corn-on-the-Cob

Friday
Breakfast - Oatmeal with Peaches & Brown Sugar
Lunch - Homemade Chicken & Cheese Taquitos
Dinner - Burgers on the Grill with Marinated Cucumbers and Potato Salad

Saturday
Breakfast - Eggs, Homefries & Sausage
Lunch - Broiler French Bread Pizza
Dinner - Olive Garden-style Chicken Piccata with Pasta and Tomato Galette

Sunday
Breakfast - Breakfast Pizza
Lunch - Sandwich
Dinner - Grilled Marinated London Broil and Slow-Cooker "Baked" Potatoes with Broccoli-Cheese Sauce

Sunday Prep:
  • Make the Chicken Taquitoes
  • Cook enough oatmeal in the slow-cooker to last all week
  • Make Pizza dough and freeze
  • Yogurt will be made Monday evening
