$60.00 A Week Grocery Budget Challenge + Weekly Meal Plan - Week of November 14, 2016


So I decided to try 3 new recipes this week.  I usually only try to fit in 1 or 2, but I felt pretty confident and decided to go with 3.  The Orecchiette recipe, Creamed Spinach recipe and Cheesy Farro with Roasted Cauliflower recipe are the newbies and are from Rachel Ray.  I must tell you that I love Ina Garten's creamed spinach recipe, so I'm interested to see about this one.

I pulled the last of the carrots from the garden this week.  I'll let the rest come back in the Spring so we'll be able to enjoy them early in the season.  We did some more bartering for burger and pork roast this week so they are not in the final total below.  More stocking up in the freezer....

The pot roast on Saturday will be made in the electric skillet.  This is something my mom has always done and results in the most melt-in-your-mouth tasty pot roast ever.  Ever!  It requires some attention (turning and adding broth every 1/2 hour or so), but it is well worth it.

Weekly Meal Plan

Monday:
Breakfast - Yogurt & Granola
Lunch - Chicken Noodle Soup - me/J - Chicken Sandwich (leftover chicken)
Dinner - Baked Cod with Baked "French Fries" and Orange & Cranberry Green Salad

Tuesday:
Breakfast - Scrambled Eggs with Homefries
Lunch - Mediterranean Salad with Tuna - me/J - Hot Dogs
Dinner - Chicken Fettucine with Roasted Red Peppers and Spinach

Wednesday:
Breakfast - Yogurt & Granola
Lunch - Chicken Noodle Soup - me/J - Chicken Sandwich (leftover chicken)
Dinner - Orecchiette with Rapini and Sausage

Thursday:
Breakfast - Scrambled Eggs with Homefries
Lunch - Mediterranean Salad with Tuna - me/J - Hot Dogs
Dinner - Slow-Cooker Beef Short Ribs with Butternut Squash Risotto

Friday:
Breakfast - Yogurt & Granola
Lunch - Chicken Noodle Soup - me/J - Chicken Sandwich (leftover chicken)
Dinner - Sautéed Marinated Chicken Breast with Rice and Creamed Spinach

Saturday:
Breakfast - Eggs over Homefries with Bacon
Lunch - French Bread Pizza
Dinner - Pot Roast with Mashed Potatoes and Gravy, and Carrots

Sunday:
Breakfast - Omelets and Hashbrowns
Lunch - Ham & Split Pea Soup
Dinner - Herb-Roasted Chicken Quarters with Cheesy Farro & Roasted Cauliflower

Sunday Meal Prep:
  • Make chicken stock with leftover chicken carcass from Saturday's meal (I use the slow-cooker and cook it overnight with water, spices, carrots, celery and onion)
  • Make chicken noodle soup
  • Put together the main part of the salad so it's easier to prep in the morning

Weekly Food Cost:
Commissary - $54.32
  • Onions, Bananas, Noosa Yogurt, Arborio Rice, Oranges, Dried Cranberries, Lettuce, Kalamata Olives, Frozen Spinach, Roasted Red Peppers, Whole Turkey (for next week), English Muffins, Ham lunch meat, hot dogs, hot dog buns

Farmer's Market - $16.00
  • Cauliflower, Spinach, Potatoes, milk, cream, eggnog
Weekly Total Cost - $81.30 (includes the turkey for next week)

I can imagine the roast will melt in your mouth. I made a roast once over an open hearth. Cooked all day. It hung from string and we twisted it cooking all sides as it would unwind and then twist it again. Best roast ever!
