The BEST Whole Slow-Cooker Chicken

Not the best photo in the world because, unfortunately, chicken cooked in the slow-cooker doesn't have much color, but this chicken is AMAZING!  Fall-off-the-bone tender it makes a perfect dinner or cook it up for use in lunches and dinners all week (chicken enchiladas, chicken quesadillas, chicken soup, chicken casserole, etc....).

The BEST Whole Chicken Cooked In The Slow-Cooker

Makes: 1 Whole Chicken

2 teaspoons paprika
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon thyme

1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon black pepper
2 large onions, peeled and each cut into 4 large chunks
1 large chicken

Place the onion chunks in the bottom of the slow-cooker.  You'll use these to keep the chicken from sitting directly on the slow-cooker's dish.  In a small bowl, combine all of the spices.  Rub all over the chicken, including under the skin.  Place chicken, breast side down, on the onion chunks.  Cover and cook on low for 4-5 hours or until the meat falls off of the bone easily when pulled with forks.

I'm gonna make this on the weekend. This is so much better than the rotisserie chickens you can buy at the store and so easy in the crockpot! I guess you could brown the chicken first in a pan if you have the time.
Thank you for sharing!

Hi Staci! I live just across the lake in Underhill, Vermont. We can actually see the Adirondacks from our front porch on a clear day. My husband and I have been following your blog ever since we bought our Homestead last March of 2018. We, too, our older homesteaders (hubby just turned 60, and I am 49). We have a small egg business, at the moment. We have over 100 chickens and 12 ducks. We are also adding dog cookies and cakes to our Whispering Hills Homestead business. So excited to be a homesteader!

I was excited when I found your blog. I made this recipe yesterday. I had 2 organic chickens, and decided to use the crock pot for one, and put the other one in the oven. I browned the one that went in the oven, first. I absolutely LOVE the combination of spices. I use basil, oregano, garlic powder, onion powder on just about everything. Both chickens were yummy, but the crock pot chicken was, by far, the best. So tender, and can be used in so many recipes. I make a chicken crusted pizza. It's so yummy. This chicken will be wonderful in this recipe. Thanks so much for sharing your recipes, and other wonderful posts!
