Moose Munch Knock-Off

You've likely seen {or tried} the famous Moose Munch by that specialty shop you find at all the outlet malls.  This is similar.......only better.

I'm on a flavored popcorn kick and this is the newest craving in our home.  A little salty, a little sweet, and a whole lot of crunch.  This recipe makes a good amount of caramel sauce so if you prefer your popcorn with a little less sauce increase the amount of popcorn slightly.  Adjust the chocolate as you desire - a little more or a little less.  I hope you find this as addictive as we do!

1/2 cup unpopped popcorn
8 Tablespoons butter
4 Tablespoons corn syrup
1 cup light brown sugar
1/2 t. salt
1/2 teaspoons vanilla
heaping 1/4 tsp. baking soda
2 oz. semi sweet or milk chocolate chocolate (chocolate chips will work)
1 oz. white chocolate (chocolate chips will not work)

Preheat oven to 250ยบ.  Prepare a cookie sheet by buttering it or spraying a thin layer of cooking spray on it.

Pop popcorn according to popper directions.  Remove all unpopped kernels from popcorn and pour popcorn into a bowl.

Combine butter, corn syrup, brown sugar, and salt over medium heat. Cook and stir until mixture comes to a boil. Continue boiling for 4 minutes without stirring.  Remove from heat and stir in baking soda and vanilla {mixture will foam}.

Carefully pour about 1 cup of the caramel mixture over the popped popcorn, tossing well so it doesn't deflate the corn.  Slowly add the remaining mixture, tossing with the popcorn, until covered.

Spread onto greased cookie sheet, and bake for 40 minutes, carefully stirring with a large wooden spoon at 15 and 30 minutes.  Place cookie sheet on a cooling rack.

In a microwave safe bowl melt the semi sweet or milk chocolate at 35 second intervals, stirring at the end of each, until melted.  In a separate microwave safe bowl melt the white chocolate in the same manner.  With a spoon, drizzle each chocolate over the sheet of caramel corn until all chocolate has been used.  Set aside for at least 30 minutes so the chocolate can harden (cookie sheet can be placed in the refrigerator if you would like to move the process along faster).  Break up the Moose Munch into chunks and store in an airtight container at room temperature.
