Pantry Challenge Check-In - Week 2

And just like that it's the second week of the pantry challenge! Things are going well as I hope they are for those of you joining in too.  I'm getting a bit of a hoarding feeling regarding rolled oats.  Who would have guessed that?  I've decided we should use up cold cereal for breakfasts first so we can save the oats for later in the month when the temp's (hopefully) dip.  J has assured me that we have at least 2 months worth of oats.  Please.  There's no way......so cold cereal it is!

Our temp's did drop temporarily this weekend allowing me to make minestrone soup.  I like to use up any bits of different shaped pasta we have hanging around in soup, so I was able to do that.  I had some odds and ends veggies that I threw in as well.

I took the time to find a couple new recipes that I had hanging out in my "someday to try" recipe folder.  I have most or all of the ingredients on hand.  I made the first new recipe yesterday and J deemed it a keeper.  I transferred it to the "repeat recipes" binder.  Finger's crossed the others are as good.


I also made a couple of baked treats this week.  Our FAVORITE Chocolate Zucchini Cake and I worked on a new recipe for Chocolate Chip & Orange Zucchini Muffins.  They were very good!  I'm trying to get any zucchini recipe ideas I have going now since the season will soon be ending.  I tried freezing shredded zucchini once and thought it took on a funny flavor.  Have you had any luck?  If so, I'd love to hear how you prepared it for the freezer.


I was able to pick up potatoes, carrots, greens, and cabbage at our CSA.  And then another farmer asked to trade fruit/veg for soap so I was able to pick up corn, peaches and apples too!

Money Spent - $5.00 on milk and half & half.

Sun - Grilled Potato Wedges, Pickles (me) Veggie Burger with Coleslaw, (J) Fried Chicken Sandwich with Coleslaw
Mon - Fettucine with Red Pepper Sauce, Corn-on-the-Cob, (J) Chicken Breast
Tues - Quesadillas (meat/bean+veg+salsa) & Rice
Wed - Baked Cod, Roasted Fingerlings, Green Beans
Thurs - (me) Salad, (J) Grilled Burger & Side Salad
Fri - Broccoli Rice, Corn Salad, (J) Grilled Chicken
Sat - (me) Veggie Stir-Fry, (J) Mississippi Pot Roast
