As Easy As A Boxed Mix Homemade Brownies



How's that for a long title?  It's true though.  These are SO easy and SO delicious - you will never buy boxed mix brownies again.

Even if it's your guilty pleasure.

These are a tad bit cake-y and a tad bit fudge-y.  I think they are the perfect blend.  But maybe I'm a
tad biased.  Not to mention that my husband {you remember him - the one who claims he doesn't like chocolate?} loves them too! They are delicious with nuts or without, with a sprinkling of powdered sugar or even with a big scoop of vanilla ice cream on top.


Especially when they are still warm. 

If you suddenly get a craving one evening for something chocolate, these will surely be your go-to bars.  Whip them up in one bowl, pour them in the pan and they are ready in a half hour total.


Craving satisfied.  Crisis diverted.

{Easy As A Boxed Mix} Homemade Brownies

Makes 1 - 8" pan

8 Tablespoons {1 stick} unsalted butter, cut into chunks
3 ounces Chocolate - unsweetened, bittersweet or semi-sweet {whatever your preference}, chopped
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cup all-purpose flour
1/3 cup nuts, if desired


Adjust an oven rack to the middle position and preheat the oven to 350 degrees Fahrenheit.  Prepare an 8-inch baking pan with butter or cooking spray.

In a medium bowl that is microwave safe, melt butter and chocolate in microwave, stirring often, 1-3 minutes.  Set mixture aside and let cool slightly.

In a large bowl, whisk together the sugar, eggs, vanilla, baking powder and salt.    Whisk in the cooled chocolate mixture until smooth. Stir in the flour until no streaks remain.

Scrape the batter into the prepared pan, smoothing the top.  Sprinkle with nuts if desired.  Bake, until a toothpick inserted into the center comes out with just a few crumbs attached, 22-27 minutes.

Let cool on wire rack at least 2 hours before removing.
