Banana Bread Muffin Tops - Vegan and Gluten Free


So, I've been eating a plant-based whole food diet for just over a month.  I promised to share recipes of some of the new things I've tried.  Along with plant-based eating, I've been limiting the oils as well and have cut out white sugar.  This also means cutting out a good majority of baked goods, which has worked out fine, but sometimes you just need a sweet little snack.

These are simple and delicious!

And a great way to use up ripe bananas.

Oh, and a side note on the cutting out of white sugar.  My teeth have been sensitive for about 20 years and they are now not sensitive to hot/cold and sweet.

  1. Congratulations on 1 month plant based! Have you found it to be easy or tough? I just made the banana bread recipe from Oh She Glows this Saturday and it was delicious! But I still have a bunch (pun intended) of brown bananas that I threw in the freezer. I'll try these out this week. And great job on the sugar! Wow, I really find it hard to quit.

  2. Thanks Mrs Armstrong!! For the most part it has been super easy. I started it when I was sick with the last sinus infection - went cold turkey, so I didn't have any symptoms that I thought I may have, or if I did, I didn't notice them because I was already so sick. :)
