Quick & Easy Mexican Rice


I'm always looking for side dishes that are easy, low prep, and don't compromise on flavor.  This recipe fits the bill.  It allows me to spend more time on the main dish while the rice cooker does all the work on the side dish.


Quick & Easy Mexican Rice
serves 4

2 teaspoons oil {only if preparing on the stove-top}
1 cup white rice {if you substitute with brown rice, follow brown rice cooking instructions}
1 16-ounce jar salsa {any brand, mild/medium/hot - depending on your preference}
2 cups water, chicken broth or vegetable broth
salt & pepper to taste
1/4 cup cilantro, stemmed and chopped, optional

Rice Cooker Instructions:  Omit the oil and throw all remaining ingredients except cilantro into the cooker.  Stir, then turn on programmed for white rice.  When finished, stir in cilantro.  Serve

Stove-Top Instructions:  In a medium saucepan, heat oil over medium.  Add rice, stirring constantly, until all rice is coated with oil.  Add salsa, liquid and salt & pepper to taste.  Bring to a boil, stir well, then cover and reduce heat to low.  Simmer 20 - 22 minutes.  Stir in cilantro before serving.
