Skillet Squash

Skillet Squash is a perfect way of using up excess zucchini and summer squash.  Quick and delicious!

This is a recipe that's not really a recipe, BUT it's a fantastic way of using up some of your zucchini or summer squash.  When I'm in a hurry, don't want to make even more of a mess cooking, and have 8 or 9 zucchini staring at me every time I open the refrigerator, this is one of my go-to sides. 


It's quick and delicious.

Skillet Squash
serves 4

1 large zucchini or summer squash, diced {or 2 small-medium squash}
1 small onion, diced
1 Tablespoon butter
1 Tablespoon oil
3 Tablespoons grated parmesan cheese
salt & pepper to taste

In a large skillet over medium heat, melt butter and oil.  Add zucchini and onion and let sit, without disturbing, for 5 minutes {to build a bit of a crust}.  Stir and allow to sit another couple of minutes before stirring again.  Continue for a total of 10-15 minutes, or until done to your liking. Salt & pepper to taste and sprinkle with parmesan.

Serve.
